Sweet potato

Step 1

Peel & small dice the sweet potatoes.

Step 2

Heat a drizzle of olive oil in a pan, over medium heat. Add the sweet potatoes & sauté for 10-12 min.

Garlic

Step 3

Meanwhile, peel & mince the garlic.

Mild chile powder, ground (Espelette)

Step 4

In the pan, add : the grated garlic, 'piment d'Espelette' & a bit of water. Cover & leave to simmer for another 10 min.

Egg

Step 5

Meanwhile, prepare the fried eggs. Melt a dab of butter in a second pan. Gently crack the egg into the pan & cook for 4 min, over medium heat.

Step 6

Once the sweet potatoes are tender, remove the pan from the heat.

Feta cheese (block)
Parsley (fresh)

Step 7

Serve the sweet potato skillet topped with crumbled feta cheese, minced parsley & the fried egg. Re-season to taste & serve with a side of green salad. Enjoy !
