This egg and sweet potato skillet is perfect for brunch...or any time of day!
Stovetop, Frying pan
Step 1
Peel and dice the sweet potato.
Step 2
Brown the sweet potato in a pan for 10 minutes with a drizzle of oil.
Step 3
Mince the garlic. After 10 minutes of cooking, add 2/3 c water per portion, the garlic, the ground chile powder and cover. Let cook 10 more minutes.
Step 4
Meanwhile, fry an egg in a pan, about 4 minutes.
Step 5
Serve the skillet with the fried egg, sprinkling with crumbled feta. (Optional: Add some chopped parsley.) It's ready!
