Make sure you have...
Digicook, Stovetop, Pot (small), Colander
Step 1
If needed, defrost the cod. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm.
Step 2
Slice the cod into large cubes.
Step 3
In the Cookeo bowl, add the cherry tomatoes & a drizzle of olive oil. Close the lid without the measuring cap & cook on 'reverse' mode : 100°C / speed 1 / 2 min.
Step 4
Add the cod, curry sauce & coconut milk. Season with salt & pepper & stir gently. Close the lid without the measuring cap & cook on 'reverse' mode : 100°C / speed 1 / 5 min.
Step 5
Serve the fish curry with a side of fluffy rice. Top with fresh cilantro, if you have some & re-season to taste. Enjoy !
