White rice (long grain)

Step 1

If needed, defrost the cod. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm.

Cod (fresh)

Step 2

Slice the cod into large cubes.

Cherry tomatoes

Step 3

In the Thermomix bowl, add the cherry tomatoes & a drizzle of olive oil. Cook for 2 min / 100°C / reverse / speed "Simmering'.

Korma curry sauce
Coconut milk

Step 4

Add the cod, curry sauce & coconut milk. Season with salt & pepper & stir gently. Cook for 5 min / Varoma / reverse / speed "Simmering'.

Cilantro (fresh)

Step 5

Serve the fish curry with a side of fluffy rice. Top with fresh cilantro, if you have some & re-season to taste. Enjoy !
