Step 1

Put the water, a pinch of salt and some olive oil in the Thermomix bowl. Insert the cooking basket with the rice, mix with the spatula.

Put the fish in the Varoma on top of the Thermomix and cook 20 min / 100°C / speed 1.

Meanwhile, cut the tomatoes in half. When the rice is cooked, drain and set to one side.

In the mixing bowl, fry the halved tomatoes in a drizzle of olive oil for 2 min / 100°C / reverse mode / speed 1.

Step 5

Add the fish, Korma paste and coconut milk, salt and pepper to the bowl. Simmer for 6 min / 100°C / reverse mode / speed 1

If the rice needs reheating, put it on the Varoma tray for the last 5 minutes of cooking time. Serve the rice with the curry (optional: add some fresh cilantro if you have any), and enjoy!
