White rice (long grain)

Step 1

If needed, defrost the cod. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & keep warm.

Cherry tomatoes

Step 2

Meanwhile, heat a drizzle of olive oil in a second pot. Add the cherry tomatoes & sauté for 2-3 min, over medium-high heat.

Cod (fresh)

Step 3

In parallel, slice the cod into large cubes.

Korma curry sauce
Coconut milk

Step 4

Add the cod, curry sauce & coconut milk. Season with salt & pepper & stir gently. Bring a light boil, cover & leave to simmer for 6 min.

Cilantro (fresh)

Step 5

Serve the fish curry with a side of fluffy rice. Top with fresh cilantro, if you have some & re-season to taste. Enjoy !
