Couscous

Step 1

Boil some water. In a bowl, add the couscous. Mix in some salt, pepper & a drizzle of olive oil. Pour the same volume of couscous in boiling water over top. Cover & set aside for 5 min. Fluff the couscous with a fork & set aside.

Clementine

Step 2

Peel the clementines & cut into segments. If needed, remove the pips.

Figs (dried)

Step 3

Cut the figs into quarters.

Pistachios (roasted)

Step 4

If needed, shell the pistachios. Roughly chop them.

Lemon

Step 5

Prepare the dressing, In a bowl, mix : the lemon juice with 1 tablespoon of olive oil per person. Season with salt & pepper.

Cilantro (fresh)

Step 6

Add the fluffed couscous to a large bowl with the clementines, dried figs & crushed pistachios. Add the fresh herbs & pour the dressing on top. Toss & enjoy !
