A creamy polenta with a surprise hidden inside... delicious runny eggs!
Make sure you have...
Oven, Stovetop, Pot (small), Whisk, Baking dish, Frying pan
Step 1
Preheat the oven to 220°C. Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté for 30 sec, stirring.
Step 2
Add the spinach & cook for 2-3 min, until lightly wilted. Remove from the heat.
Step 3
Prepare the polenta according to package instructions. Once lightly thickened, season with salt, pepper & half of the grated parmesan. Whisk to combine.
Step 4
In a greased oven-proof dish, add the cheesy polenta. Add the spinach & torn-up ham into the polenta & mix to incorporate.
Step 5
Make holes in the polenta & delicately crack the eggs in. Season them with salt & pepper. Sprinkle over with the remaining parmesan cheese. Bake for 10-15 min at 220°C.
Step 6
Once the polenta is lightly golden, remove the dish from the oven & serve with a side of green salad. Enjoy !
