Step 1
Preheat the oven to 200°C. Wash & cut the eggplant lengthwise into 1cm slices.
Step 2
Slice the mozzarella into thin rounds.
Step 3
Heat a drizzle of oil in a pan over medium heat. Add grated garlic and sauté for 2 minutes. Add aubergine slices. Sauté 2-3 minutes on each side until the eggplant begins to brown around the edges. Set aside.
Step 4
In a baking dish, spread a layer of tomato sauce on the base. Add a layer of aubergine slices over the sauce. Sprinkle with parmesan cheese and top with slices of mozzarella, and grated pepper. Repeat with remaining ingredients. Top with a layer of tomato sauce, mozzarella & parmesan cheese.
Step 5
Bake in the oven at 200°C for 20 minutes. Enjoy !
