Eggplant

Step 1

Slice the eggplant into thin rounds.

Cover the bottom of a pan with olive oil. Heat over medium and add the eggplant. Cook for 3 minutes on each side, then season with salt and pepper and transfer to a paper towel-lined plate.

Burger bun (hearty)

Step 3

In the same pan, toast the buns for 1 minute. (You can also toast them under a broiler for 3 minutes.)

Sun-dried tomatoes

Step 4

Cut the sun-dried tomato into thin slices.

Feta cheese (block)
Eggplant
Sun-dried tomatoes

Step 5

Spread hummus on both sides of each bun and stack the eggplant, tomato, crumbled feta and arugula on the bottom bun(s). Season to taste and add a drizzle of olive oil.

Step 6

Add the top bun and serve, it's ready!
