Step 1
Cook the pasta according to the instructions on the packet.
Step 2
Meanwhile, finely chop the garlic and chop the the eggplant lengthways and into thin strips. In a hot pan with a generous amount of olive oil, add the garlic and eggplant. Cook on a medium heat for around 10 minutes.
Step 3
Once the eggplant is cooked (they should be translucent and slightly golden), add the strained pasta to the pan, along with the parmesan, ham cut into strips. Season, mix and serve!
