Avocado

Step 1

Pit the avocado, remove the skin and slice into thin strips.

Wash the salad and chop in half.

English muffin

Step 3

Slice the muffins in half and toast them.

Egg

Step 4

In a bowl, crack the eggs, adding a pinch of salt and pepper. Mix.

Butter (unsalted)

Step 5

In a frying pan on a low heat, add the butter then the eggs, mix with a spatula. The eggs should stay a bit soft, not overcooked.

Smoked salmon

Step 6

Serve the eggs on top of the muffins, add the salmon on top. Serve with the sliced avocado and dressed salad. Season and serve!
