Cauliflower (fresh)

Step 1

Remove the cauliflower leaves & stem.

Step 2

Slice the cauliflower into florets. If needed, slice the florets in halves or quarters, depending on their size.

Step 3

In a pot of salted boiling water, cook the cauliflower for 5 min, over medium heat.

Duck breast

Step 4

Meanwhile, score the duck breast using a sharp knife, making a criss-cross pattern. Large dice the duck breast.* *Check out our tips for this step

Step 5

Heat a pan over high heat. Once piping hot, add the duck breast skin-side down. Cook for 2 min.

Red onion

Step 6

Meanwhile, peel & thinly slice the onions.

Step 7

Lower heat to medium. Flip the duck & cook for another 2 min.

Step 8

Once cooked through, drain the cauliflower.

Step 9

Once the duck is golden, remove it from the pan & set aside.

Turmeric (ground)

Step 10

In the same pan, add some of the duck fat & the ground turmeric. Mix.

Step 11

Add the onions & drained cauliflower to the pan. Sauté for 5 min, over high heat, stirring. If the veggies start sticking to the pan, add extra duck fat.

Apple cider vinegar

Step 12

Add the duck back to the pan, without the remaining fat. Season with salt & pepper. Add the apple cider vinegar & stir.

Step 13

Serve the duck breast & cauliflower in a plate. Re-season to taste & enjoy !
