Make sure you have...
Oven, Stovetop, Peeler, Pot (small), Baking dish
Step 1
Peel the sweet potatoes and cut them into cubes. Preheat the oven to 210°C.
Step 2
Boil the sweet potatoes for 10 minutes.
Step 3
Meanwhile, dice the shallots. Remove the duck meat from the thighs, leaving off the fat and the bones.
Step 4
Take the potatoes out of the microwave or remove from the heat, they should be soft (put them back in for 2 more minutes or continue cooking if they're not).
Step 5
Strain. Mash them using a fork, adding a bit of butter or olive oil, milk & salt and pepper.
Step 6
In an oven-proof dish, combine the duck & shallots.
Step 7
Cover with the mashed sweet potatoes, sprinkle on breadcrumbs. (Optional: add a few bits of butter on top so the crumbs go nice and golden)
Step 8
Bake for 15 minutes. Enjoy !
