Step 1
Remove any excess fat off the edges of the duck. On the skin side, cut a criss cross pattern using a sharp knife. Season with salt & pepper.
Step 2
Heat a pan on medium-high heat. Place the duck skin side down in the pan and cook for 6 minutes, while removing the fat with the spoon from time to time.
Step 3
Zest the oranges using a knife or vegetable peeler. Remove the inner white part to remove the bitterness. Cut in thin slices and set aside.
Step 4
Squeeze the juice from the oranges and set aside.
Step 5
After 6 minutes, flip the duck and cook on the other side. Season with salt & pepper and cook for an additional 10 minutes, while continuing to remove the fat from time to time.
Step 6
Once the duck is cooked, remove from the pan and wrap the duck breast in aluminium foil for 5 minutes.
Step 7
While the pan is still hot, add the orange juice and scrape the pan drippings with a spatula. Add the honey and orange zest. Cook for 3 minutes on low heat.
Step 8
Put the duck back in the pan and coat with the sauce.
Step 9
Cut the duck into slices and serve with a side salad. Enjoy!
