For when one chocolate just isn't enough for your shortbread cookies !
Oven, Whisk, Spatula, Parchment paper
Step 1
Preheat the oven to 220°C. In a large bowl, add : the softened butter, caster sugar & brown sugar (if you don't have brown sugar, you can replace with more caster sugar). Mix using a whisk, until you obtain a creamy texture.
Step 2
Add the eggs & a pinch of salt. Whisk until combined.
Step 3
Add in the baking powder, flour & powered almonds. Fold-in using a spatula.
Step 4
Roughly chop the dark & white chocolat.
Step 5
Add them to the cookie dough & stir to combine.
Step 6
Make dough balls of approximately 4 cm using an ice-cream scoop or your hands.* Set aside to chill in the fridge for 15 min (this helps keep the center gooey & the cookies nice & thick). *Check out our tips for this step
Step 7
Lay the cookies out on a baking tray covered in parchment paper. Bake for 8 minutes at 220°C.
Step 8
Once golden on the sides, remove the cookie tray from the oven. Top with a bit of fleur de sel & enjoy !
To make batches of cookies at any time, freeze the raw cookie balls & bake off when you want!
