Step 1
Preheat the oven to 220°C. In a large bowl, add the butter (softened, not melted).

Add the white and brown sugar* (if you don't have brown sugar, use regular sugar). *Check out our tips for this recipe

Mix until texture is creamy.
Step 4
Next, add the eggs, a pinch of salt and mix using a whisk.
Step 5
Add in the flour, almond, cocoa powder, baking powder and fold to mix, using a spatula.
Step 6
Roughly break up the chocolate.
Step 7
Add the chocolate to the dough and mix.
Step 8
Using your hands or an ice cream scoop, make 2 inch balls.
Step 9
Optional: roll the balls in sesame seeds for an extra kick!
Step 10
Remove the number of balls necessary, keeping the others in the freezer for easy preparation and freshly baked cookies on another day.
Step 11
Drop the cookies onto a baking tray covered with parchment paper.
Step 12
Gently flatten them with your hand or the back of a spoon and bake for 9-10 minutes at 220°C.
Step 13
Remove the cookies from the oven and let cook for 5 minutes before serving.
Step 14
Top each with a bit of sea salt before serving and enjoy!
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
