Zucchini

Step 1

Wash and grate the zucchini.

Then salt the pieces and place them in a colander in the sink.

While the zucchini is in the colander, peel and finely chop the garlic.

Add the yogurt, cream cheese, minced garlic, chopped herbs, salt, and pepper together in a bowl and mix.

In a separate bowl, whisk your eggs with some salt and pepper until they are frothy. (Option: Add ¼ cup of milk per person if you have it.)

Squeeze the zucchini in between your hands to wring out any extra water, and then add them to the eggs.

In a frying pan on medium heat, drizzle some olive oil and then pour in your egg batter.
