Oven, Stovetop, Citrus juicer, Grater, Pot (small), Parchment paper
Step 1
Preheat the oven to 210°C. Prepare the marinade. In a pot, over low heat, combine : honey, curry powder, lime zest & 1 tablespoon of olive oil per person.
Step 2
In a shallow dish, add the pork chops & pour the marinade on top. Flip the pork chops to coat them evenly. Chill for approx 12 minutes.
Step 3
Wash & slice the tomatoes in halves.
Step 4
Remove the pork chops from the fridge & add them to a baking tray lined with parchment paper.
Step 5
Add the tomatoes & coat the pork chops with some of the marinade. Season with salt & pepper & drizzle the tomatoes with olive oil. Roast for 20 min at 210°C.
Step 6
Once the meat is cooked & the tomates are golden, remove the dish from the oven.
Step 7
Serve the curry pork chops & roasted tomatoes in a plate. Top with the remaining marinade & freshly chopped parsley, if you have some. Enjoy !
