Peel and slice the onions.

In a hot pan, add a drizzle of olive oil. Add the onions and curry and sauté for about 3 minutes over medium heat.

Step 3

Add the lentils, peeled tomatoes, and water (1.5x the volume of lentils). Cover and cook over low heat for 15 minutes.

Coconut milk
Spinach (babies)

Step 4

Add the coconut milk and spinach. Stir well. Add salt to your liking.

Egg

Step 5

Make wells and break the eggs into them. Salt, pepper. Cover the pan and cook for about 4 minutes over medium heat.

Step 6

Serve and add some fresh herbs if you have them. It's ready !
