Step 1
Cut the cucumber into thin long slices (4-5 inches). Season with salt & pepper and a drizzle of olive oil and mix to coat.
Step 2
Cut the cheese into thin slices.
Step 3
Cut the turkey into strips.
Step 4
Add a drizzle of olive oil to a pan on high heat. Add the turkey and curry powder. Cook for 2 minutes on each side, until cooked through. Season with salt & pepper and set aside.
Step 5
Spread the cream cheese on each slice of bread.
Step 6
Add the comté, cucumber, turkey and roquette and close the sandwich. Continue the same process for each sandwich.
Step 7
Add a dab of butter (or olive oil) to a pan on medium heat. Cook the grilled cheese on each side for 2 minutes, until golden. Make sure they don't burn!
Step 8
Turn off the heat, and remove the pan from the burner. Cover the pan and let it sit for 1 minute.
Step 9
Cut the grilled cheese. Serve hot and enjoy!
