Step 1
Wash the leek and cut off the ends to keep only the white. Cut it in half lengthwise and finely slice it.

In a hot pan, add a pat of butter and the chopped leek. Sauté over high heat for 2 minutes while stirring. Season with salt and pepper.

Lower the heat, cover and simmer for 8 minutes.

Preheat oven to 240°C. Mix the cooked leeks, cream, parmesan and grated cheese in a bowl (keep a small handful for later).* Season with salt and pepper. *Check out our tips for this step

Butter the bread on one side only.

Butter a ovenproof dish.
Step 7
Arrange half of the slices buttered side up. Add the leek filling, reserving one tablespoon per serving.

Bake for 10 minutes at 240°C. Serve with a salad seasoned to your taste, and it's ready!
For a truly flavoursome dish, we suggest adding bacon bits, sautéed mushrooms or goats cheese.
