Crispy, cheesy chicken with green broccoli for balance!
Stovetop, Frying pan, Pot (small), Grater
Step 1
Bring a pot of salted water to a boil. Cut the broccoli into florets.
Step 2
Add the broccoli to the pot and cook for 10 minutes.
Step 3
Place the chicken on a sheet of plastic wrap. Cover with another sheet, then use a heavy pot, rolling pin or meat tenderizer to pound it into thin cutlets.
Step 4
Meanwhile, lightly beat the egg together with a pinch of salt and pepper in a shallow bowl.
Step 5
Mix the bread crumbs with half of the parmesan and place on a plate.
Step 6
Place the flour on a separate plate. Dip the cutlets in the flour, then the beaten egg, then the bread crumbs.
Step 7
For a thicker crust, dip the breaded cutlets one more time in the egg and then the bread crumbs.
Step 8
Drain the broccoli.
Step 9
Heat 5-10cl of oil in a medium frying pan over medium heat. Once the oil sizzles when a pinch of bread crumbs is added, add the cutlets.
Step 10
Cook over medium heat for 3 minutes on each side, until golden brown.
Step 11
Transfer the cutlets to a paper towel-lined plate. Season to taste with salt, then cut into slices (optional).
Step 12
Plate the chicken with the broccoli, drizzled with a little olive oil. Sprinkle the remaining grated parmesan over the plate and serve!
