Leeks

Step 1

Preheat the oven to 180°C. Remove the green part of the leek and cut the white part in half the long way. Wash to remove any dirt or impurities.

Put the leeks in a pan with a few spoonfuls of water and cook, covered, on medium heat for 15 minutes.

Garlic

Chop the garlic.

Finely chop the parsley.

Put the parsley and garlic in a bowl with the breadcrumbs, salt & pepper, and add a spoonful of olive oil per person. Mix to combine.

Drain the leeks after 15 minutes.

Put the leeks and the salmon on a baking tray.

Dijon mustard

Step 8

Cover the salmon with a thin layer of mustard and coat in the breadcrumb mixture. Bake for 15 minutes at 180°C.
