Mild chile powder, ground

Step 1

In a shallow dish, add the egg, a pinch of salt & pepper and whisk. Optional: add a pinch of cayenne pepper

Flour (all-purpose)
Chicken breast

Step 2

Add the flour to another shallow dish and the breadcrumbs in a third dish.

Bread crumbs (plain)

Step 3

Dip the chicken in the flour and then in the egg. Finally, dip the chicken in the breadcrumb mixture and coat on both sides. Set aside.

Step 4

For a thicker breading, dip again in the egg and the breadcrumbs.

Oil

Step 5

Add 3-6 tablespoons of oil in a frying pan and heat to medium-high heat. When the oil is nice and hot, add the chicken. Tip: Test the oil by throwing in a few pieces of breadcrumbs. The oil is hot enough if they sizzle!

Step 6

Cook the chicken in medium heat for about 4 minutes on each side, or until golden. Salt.

Step 7

Remove the chicken and place it on a paper towel lined plate to absorb the excess oil.

Step 8

Cut the chicken into strips.

Step 9

Serve the chicken with a salad with the dressing. Tip: Try vinegar and lemon juice for a light dressing. Enjoy!
