White rice (long grain)

Step 1

In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice.

Chicken breast

Step 2

Meanwhile, slice the chicken into bite-sized pieces.

Garlic

Step 3

Heat a drizzle of olive oil in a pan, over high heat. Add the chicken & season with salt, pepper & grated garlic. Sauté for 4-5 min.

Peanut butter
Coconut milk (full fat)

Step 4

Add the peanut butter & coconut milk. Stir & continue cooking for 1-2 min until the sauce thickens.

Cucumber

Step 5

Meanwhile, wash & slice the cucumber into thin strips using a vegetable peeler.

Peanuts
Cilantro (fresh)

Step 6

Serve the rice on a plate with the peanut chicken & cucumber salad. Top with crushed peanuts & chopped coriander, if you have some. Re-season to taste & enjoy!
