Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice.
Step 2
Meanwhile, slice the chicken into big cubes.
Step 3
Heat a drizzle of olive oil in a pan, over medium-high heat. Add the chicken & season with salt & pepper. Sauté for 4-5 min.
Step 4
Meanwhile, wash & slice the cucumber into thin strips using a vegetable peeler.
Step 5
Prepare the peanut sauce. In a bowl, combine : the peanut butter & coconut milk. If needed, add a small drizzle of water for desired consistency.
Step 6
Serve the fluffy rice with the chicken & cucumber salad. Coat the chicken in the peanut sauce & re-season to taste. Top with some fresh cilantro & enjoy !
For a truly flavoursome dish, we suggest frying the chicken with some garlic & shallots & adding a bit of soy sauce to the peanut dressing.
