Step 1

Wash the vegetables, cut the carrots, leeks and mushrooms into thin slices. Cut the chicken into cubes.

In a pot, add a drizzle of olive oil and the chicken, carrots and leeks. Sauté for 3 minutes.

Next add the veal stock, 1/2 cup of water per person, the mushrooms, salt, pepper and continue cooking for 20 min on medium-low heat.

In the meantime, cook the rice according to the instructions on the package. Drain and set aside.
