Everyone loves zucchini when it's covered in cheese!
Make sure you have...
Stovetop, Pot (small), Frying pan, Colander, Grater
Step 1
In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta.
Step 2
Meanwhile, wash & slice the zucchini into small cubes.
Step 3
Cut the brie into slices or chunks.
Step 4
Heat a drizzle of olive oil in a pan, over medium-low heat. Add the grated garlic & sauté for 30 sec, stirring. Add the zucchini* & sauté for 6-7 min. Season with salt & pepper, then set aside. *Check out our tips for this step
Step 5
In the same pan, add the cream & brie cheese. Season with salt & pepper & stir. Cook for 3 min until the cheese has melted & you obtain a creamy sauce.
Step 6
Add the pasta & zucchini to the pan & stir to combine.
Step 7
Serve the creamy zucchini pasta & top with fresh basil, if you have some. Re-season to taste & enjoy !
For a truly flavoursome dish, we suggest adding shallots when cooking the courgettes & deglazing them with a bit of white wine.
