Make sure you have...
Stovetop, Pot (small), Frying pan, Colander, Grater
Step 1
Cook the pasta in salted boiling water according to package directions (about 10 minutes). Drain.
Step 2
Meanwhile, cut the zucchini into bite-size chunks.
Step 3
Cut the brie into slices or chunks.
Step 4
Heat a drizzle of olive oil in a pan over medium-low heat. Add the grated or minced garlic, then add the zucchini.* Sauté for 5 minutes, season with salt and pepper and remove from the pan when lightly browned. *Check out our tips for this step
Step 5
Add the cream and brie to the pan. Cook for 3 minutes or until the cheese is melted. Season with salt and pepper.
Step 6
Add the pasta and zucchini to the pan and stir to combine.
Step 7
Plate the pasta, seasoning to taste, and top with fresh basil leaves (optional). It's ready!
For a truly flavoursome dish, we suggest adding shallots when cooking the courgettes & deglazing them with a bit of white wine.
