Blender, Pot (small), Frying pan, Stovetop, Colander

Pasta (linguine)

Step 1

In a pot of salted boiling water, cook the pasta according to package instructions. Once cooked through, drain the pasta.

Almonds (sliced)

Step 2

Meanwhile, toast the slivered almonds in a hot dry pan for a couple of min, until golden. Set aside.

Avocado

Step 3

Slice the avocado in half. Remove the skin & dice the avocado.

Basil (fresh)
Herbes de Provence
Parmesan (shaved)

Step 4

Prepare the avocado cream. In a blender, add : the avocado, basil leaves, 'herbes de Provence', parmesan shavings & 1 tablespoon of olive oil per serving. Blend until you obtain a creamy texture.

Step 5

Add the avocado cream into the pot with the drained pasta. Season with pepper & mix to evenly coat.

Step 6

Serve the creamy pasta in a plate. Top with the toasted almonds, parmesan shavings & fresh basil. Re-season to taste & enjoy !
