A light and easy summer salad that's ready before you can say cous cous!
Make sure you have...
Step 1
Add the cous cous to a bowl and add 1/3 cup of cold water (yes, cold!) per portion. Cover and let the cous cous absorb the water for 5 minutes.
Step 2
Wash the veggies. Cut the pepper in thin strips and the tomatoes in halves or quarters.
Step 3
After 5 minutes, fluff the cous cous with a fork.
Step 4
Add the cous cous, tomatoes, peppers, tuna and lemon juice to a big bowl with 1 tablespoon of olive oil (per portion), salt & pepper and mix. Optional: add some fresh parsley. Enjoy!
