Stovetop, Colander, Whisk, Frying pan
Step 1
Drain the corn.
Step 2
In a bowl, add the flour, baking powder, milk and egg. Mix with a whisk.
Step 3
Add Parmesan cheese and corn. Season with salt and pepper* and mix. *Check out our tips for this step
Step 4
Heat a few drizzles of olive oil in a skillet on medium heat.
Step 5
Add a ladle of the mixture to the pan and flatten slightly into an even shape.
Step 6
Brown for 3 minutes on each side on medium heat.
Step 7
Place corn fritters on paper towels before serving.
Step 8
In a bowl, mix the Greek yogurt with salt, pepper and a drizzle of olive oil. Optional: add a pinch of chili pepper.
Step 9
Serve the fritters with the yogurt sauce and salad. Season the salad to taste and enjoy!
For a truly flavoursome dish, we suggest adding piment d'Espelette, smoked paprika or dried herbs into the pancake batter.
