The perfect Mediterranean combo: veggies, fish and a drizzle of olive oil!

Oven, Baking dish
Step 1
Preheat the oven to 210°C. Wash the vegetables. Cut the tomatoes in quarters.
Step 2
Cut zucchini in thin half-moon slices.
Step 3
Quarter the onions.
Step 4
Cut the peppers in big cubes.
Step 5
Put all the vegetables in a baking dish. Add olive oil, salt & pepper* and mix. Bake for 20 minutes. *Check out our tips for this step
Step 6
After 20 minutes, remove the dish from the oven. Add the cod on top of the vegetables with another drizzle of olive oil and a sprinkle of salt & pepper. Bake for another 10 minutes.
Step 7
Remove from the oven and serve. Enjoy!
For a truly flavoursome dish, we suggest seasoning the veggies with "herbes de Provence", garlic or "piment d'Espelette".
