Step 1
If needed, defrost your cod. Preheat the oven to 200°C. Peel the sweet potatoes, then cut them into small cubes.
Step 2
Wash then cut the zucchini in half lengthwise, then into half moons.
Step 3
Peel then cut the red onion into quarters.
Step 4
On a baking sheet covered with baking paper, add the sweet potatoes, zucchini and red onion. Drizzle with a good drizzle of olive oil. Salt, pepper and add thyme. Mix everything. Bake for 30 minutes at 200°C.
Step 5
Heat a drizzle of olive oil in a pan and add the cod fillet. Add salt and pepper and fry for 2 minutes on each side over medium heat until nicely browned.
Step 6
Remove the vegetables from the oven and serve them with the cod fillet. Add a few parsley leaves if you have them and some lemon. It's ready !
