Cod with Creamed Spinach & rice

Ingredients

Stovetop, Pot (small), Frying pan

Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice.

Step 2
Meanwhile, peel & small dice the shallot.


Step 3
Heat a drizzle of olive oil in a pan over medium heat. Add the cod. Season with salt, pepper & 'herbes de Provences'. Cook for 3-4 min on each side.


Step 4
In the meantime, heat a drizzle of olive oil in a second pan over medium heat. Add the shallots & grated garlic. Cook for 2-3 mins.

Step 5
Add the creamed spinach & a splash of water to the pan. Cover with a lid & continue cooking for 5 min. Mix well & season with salt & pepper.

Step 6
Serve the rice on a plate with the creamed spinach & cod. Add a lemon wedge, if you have some & top with chopped shallots. Re-season to taste. Enjoy!
