Step 1

Wash, peel and chop the zucchini and carrots in small cubes. Dice the garlic.

Curry powder

Step 2

In a pan on a high heat, add a splash of olive oil, garlic and curry, then the carrots and zucchini. Cook for 7 to 10 minutes, stirring frequently, until the vegetables are soft.

Cod (fresh)

Step 3

In another hot pan, add a bit of butter (or olive oil), then the cod, and cook for 4 minutes on a medium heat. Season towards the end of the cooking time. Serve with the vegetables and add chopped cilantro to garnish. Dinner's up!
