Stovetop, Frying pan
Step 1
If needed, defrost your shrimp. In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain he rice & keep warm.
Step 2
Meanwhile, wash & cut the broccoli into florets.
Step 3
In a second pot of salted boiling water, add the broccoli. Cook for 6 min, then drain.
Step 4
Meanwhile, peel & slice the onions into thin strips.
Step 5
Heat a drizzle of olive oil in a pan, over medium heat. Add the onions & curry powder. Sauté for 4-5 min, while mixing, until lightly browned.
Step 6
Pour the coconut milk into the pan. Season with salt & pepper & add the thawed shrimp. Stir, cover & leave to simmer for another 2 min, over low heat.
Step 7
Serve the curry shrimp with the fluffy rice & broccoli in a bowl or shallow plate. Top with extra curry sauce & re-season to taste. Enjoy !
