Step 1
In a pot of boiling salted water, cook the rice according to the package instructions. Drain it at the end of cooking. Keep warm.

Meanwhile, wash then cut the broccoli into tops.

Cook the broccoli in a pan of boiling salted water for 6 minutes. At the end of cooking, drain it.
Step 4
At the same time, peel and cut the onions into thin strips.
Step 5
Heat a drizzle of olive oil in a frying pan over medium heat. Add the onions and curry and brown them for 4 to 5 minutes while mixing.
Step 6
Pour the coconut milk into the pan, add salt and pepper. Add the previously thawed shrimp. Mix, then simmer covered for 2 minutes over low heat.
Step 7
Serve the curry shrimp with the rice, broccoli and a little sauce, if you have any left. Re-season to taste. It's ready !
