A one-way ticket to India with this creamy zucchini curry with coconut milk !
Make sure you have...
Stovetop, Frying pan, Pot (small)
Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked though, drain the rice.
Step 2
Meanwhile, wash & slice the zucchini into half-moons.
Step 3
Heat a drizzle of olive oil in a pan, over high heat. Add the zucchini. Season with salt, pepper & curry powder. Mix, then brown them for 6-7 min.
Step 4
Reduce the heat, then pour in the coconut milk. Mix & continue cooking for another 3-4 min, until the sauce has thickened & the zucchini are tender.
Step 5
Add the drained rice to the pan & stir to evenly coat for a few min.
Step 6
Serve the zucchini curry in a bowl. Top with a drizzle of coconut milk, freshly grated pepper & sprinkle over with crushed peanuts & fresh mint, if you have some. Enjoy !
