Step 1
If needed, defrost your cod. In a pot of boiling salted water, cook the rice according to the package instructions. Drain it at the end of cooking. Keep warm.
Step 2
Meanwhile, wash then cut the broccoli into tops.
Step 3
Cook the broccoli in a pan of boiling salted water for 6 minutes. At the end of cooking, drain it.
Step 4
At the same time, peel and slice the onions into thin strips.
Step 5
Heat a drizzle of olive oil in a frying pan over medium heat. Add the onions and curry and brown them for 4 to 5 minutes while mixing.
Step 6
Pour the coconut milk into the pan, add salt and pepper. Add the cod fillets. Mix, then simmer covered for 2 to 3 minutes, over low heat.
Step 7
Serve the curry cod with the rice, broccoli and a little sauce, if you have any left. Re-season to taste. It's ready !
