A breaded fish that is bursting with flavor !
Stovetop, Digicook
Step 1
Fill the Digicook bowl with water. Place the removable basket into the bowl & add in the peas. Close the lid with the top on & start the program 120°C / speed 1 / 20 min.
Step 2
Meanwhile, prepare the coconut fish sticks. Slice the cod filets into strips.
Step 3
In a shallow dish, crack the eggs. Season with salt & pepper then whisk with a fork. In a second shallow dish, add the breadcrumbs & grated coconut. Dredge the fish sticks in the egg mixture followed by the breadcrumb / coconut mix.
Step 4
Once cooked through, remove the removable basket & pour out the water from the Digicook. Add the peas & cream into the Digicook & season with salt & pepper. Close the lid with the top on & start the program speed 5 / 30 sec. Keep warm.
Step 5
Melt the butter in a pan, over high heat. Add the coconut fish sticks & sauté for 4-5 min, flipping halfway through.
Step 6
Serve the mashed peas in a plate with the coconut fish sticks. Re-season to taste & enjoy !
