Just as simple as chicken with coconut milk, but the added touch of lime and spinach makes all the difference!
Make sure you have...
Frying pan, Stovetop, Pot (small)
Step 1
Cook the rice according to the instructions on the package (about 10 minutes in a pot of boiling salted water).
Step 2
In the meantime, remove the outer skin and finely dice the shallot.
Step 3
Cut the chicken breast in half lengthwise in order to make it very thin.
Step 4
Once the rice is cooked, drain and set aside.
Step 5
Add a drizzle of olive oil to a pan on high heat. Add the chicken, salt & pepper and cook for 3 minutes on each side, until golden brown.
Step 6
Once the chicken is cooked, remove from the pan and set aside.
Step 7
In the same pan, add the shallots and cook on medium heat for 2 minutes, stirring frequently.
Step 8
Lower the heat and add the coconut milk and 50 ml of water per person.
Step 9
Mix and add the chicken back into the pan. Add the spinach.
Step 10
Add the lemon zest and juice and cook for 1 minute. Season with salt & pepper.
Step 11
Serve the rice with the spinach and sliced chicken. Pour the sauce on top and add some fresh cilantro (optional). Enjoy!
