Step 1

Cut the tomatoes, pepper, cucumber, onion and garlic. Add everything to a blender.

Step 2

Add 1 tablespoon of olive oil and 1/2 tablespoon of vinegar (per portion). Optional: Add some chili powder or red pepper flakes for heat

Step 3

Serve the gazpacho with the toppings of your choice: cubed tomato or cucumber, croutons, fresh herbs. Enjoy!
