Cook the rice according to the package instructions.

Lime

Step 2

Quarter the lime into wedges.

Cilantro (fresh)

Step 3

Rinse, dry & roughly chop the cilantro.

Keep an eye on the rice & adjust the heat as needed!

Pat dry the chicken with a paper towel. Season both sides with salt, pepper & coriander.

Heat a drizzle of oil in a pan over medium-high heat. Add the chicken. Cover & cook for 4-5 min on each side, until it's fully cooked.
