A creamy mousse embellished with orange and cookies for a real moment of sweetness!
Stovetop, Pot (small), Electric hand mixer, Spatula, Ramekin, Grater
Step 1
Melt the chocolate in a bain-marie or in the microwave in a mixing bowl. Mix. When the chocolate is well melted, remove it from the bain-marie.
Step 2
Separate the egg whites from the yolks.
Step 3
Pour the egg yolks into the salad bowl with the melted chocolate and mix. Then add orange zest and mix until you obtain a smooth and homogeneous texture.
Step 4
Beat the whites until stiff with a pinch of salt. Then add the vanilla sugar, then whisk again.
Step 5
Using a spatula, very delicately fold the egg whites into the chocolate in several batches.
Step 6
Pour the mixture into individual cups or small ramekins, alternating chocolate mousse and crumbled speculoos. Refrigerate for at least an hour before serving.
Step 7
Take the chocolate mousses out of the fridge. Add crumbled speculoos and orange zest. Enjoy, it’s ready!
