After numerous tests, we proudly present Jow's perfect cookie recipe ;)
Oven, Whisk, Spatula, Parchment paper
Step 1
Preheat the oven to 220°C. In a large bowl, add the butter (softened, not melted).
Step 2
Add the white and brown sugar (if you don't have brown sugar, use regular sugar).
Step 3
Add a pinch of salt and mix until creamy.
Step 4
Next, add the eggs and mix using a whisk.
Step 5
Add in the flour, almond meal, baking powder and fold to mix, using a spatula.
Step 6
Roughly break up the chocolate.
Step 7
Add the chocolate to the dough and mix.
Step 8
Using your hands or an ice cream scoop, make 2 inch balls.
Step 9
Optional: roll the balls in sesame seeds for an extra kick!
Step 10
We suggest chilling the balls (in the fridge or freezer), for 15 minutes before cooking, this will help keep the center gooey.
Step 11
Arrange the cookies on a baking tray covered with parchment paper and gently flatten them with your hand. Bake for 8 minutes.
Step 12
Remove from the oven.
Step 13
Top each with a bit of sea salt before serving.Enjoy!

Tip: This is the perfect dough to make ahead and keep in the freezer to have fresh baked cookies anytime!
