Ooey-gooey delicious! The best cookies you've ever had!
Oven, Parchment paper, Whisk, Spatula
Step 1
Preheat the oven to 220°C. Spread the peanut butter on parchment paper and freeze it for a few minutes.
Step 2
In a large bowl, add the butter (softened, not melted).
Step 3
Add the sugar and brown sugar to the butter (if you don't have brown sugar, replace it with regular sugar).
Step 4
Mix until you have a creamy texture.
Step 5
Next, add the eggs and a pinch of salt and mix using a whisk.
Step 6
Add the flour, almond meal, baking powder and fold it in using a spatula.
Step 7
Cut the chocolate into small chunks using a knife.
Step 8
Add the chocolate to the dough mixture.
Step 9
Add the peanut butter and mix to combine.
Step 10
Using a spoon or an ice cream scoop, drop 2 inch rounds onto a non stick baking tray.
Step 11
We suggest chilling the dough balls (in the fridge or freezer), for around 15 minutes before cooking, this will keep a gooey center while they cook as well as keeping them nice and thick...
Step 12
Gently flatten the cookies using your hand or the back of a spoon and bake for 8 minutes.
Step 13
Remove the cookies from the oven.
Step 14
Top each with a bit of sea salt before serving. Yum!
