Step 1
Peel & dice the onion.
Step 2
Heat a drizzle of oil in a pan over medium heat. Add most of the onion (save a tbsp for topping). Cook until translucent, about 1-2 min.

Add tomatoes, chipotle seasoning, broth & salt. Cook, stirring for 5 min.
Step 4
Add chicken breasts to the pan. Season with salt & cover. Reduce the heat & simmer the chicken for 8-10 min, flipping halfway. Simmer until fully cooked, or until it reaches an internal temperature of 210°C.
Step 5
Transfer the cooked chicken to a plate or shallow bowl. Raise the heat to medium-high & simmer until the sauce thickens, about 2-3 min.
Step 6
Use 2 forks to shred the chicken.
Step 7
Add the shredded chicken back to the pan with sauce. Mix it all together until the chicken is evenly coated in sauce.
Step 8
Serve the chipotle chicken over toasted tortillas. Top with reserved onion, cilantro & lime (both optional). *(check out our tips for this step) Enjoy!
For a truly flavoursome dish, we suggest adding some avocado, feta cheese or corn.
