Step 1
In a pot, cook the rice according to pack instructions. Strain once cooked.

Peel and dice the carrot and onion.

Peel and dice the onion.
Step 4
Add a splash of olive oil to another pot and cook the onions and carrots on a low heat for 10 minutes.
Step 5
Add the corn, red beans and crushed tomatoes.
Step 6
Season and add the paprika.* Cover and leave to simmer on a low heat for 15 minutes. *Check out our tips for this step
Step 7
Serve the chilli with rice.
For a truly flavoursome dish, we suggest adding cumin, Cayenne pepper & garlic powder.
