White bread (sliced)

Step 1

If desired, toast the slices of bread in a toaster or in the oven.

Red onion

Step 2

Peel then finely chop the red onion.

Chickpeas (canned)

Step 3

In a deep plate or bowl, pour the previously drained chickpeas. Coarsely mash them with a fork.

Whole milk yogurt (plain)
Mayonnaise
Lemon

Step 4

Then add the mayonnaise, yogurt, lemon juice and zest and the chopped onion. Season with salt & pepper and mix.

Arugula

Step 5

Spread the chickpea mixture on one of the two slices of bread. Add the lettuce and a drizzle of olive oil.

Step 6

Close the sandwich and cut it in half if you wish. It's ready!
