Step 1
In the Digicook bowl, add : the peeled onions & garlic. Close the lid with the measuring cap on & start the program : speed 5 / 15 sec. Clean the sides of the bowl with the spatula.
Step 2
Add a drizzle of olive oil & the powdered curry, cumin & ginger. Close the lid without the measuring cap on & start the program : 'reverse' / 120°C / speed 1 / 4 min.
Step 3
Add the chopped tomatoes, coconut milk, 50 ml of water per serving & the drained chickpeas. Season with salt & pepper. Stir & close the lid without the measuring cap on. Start the program : 'reverse' / 100°C / speed 1 / 10 min.
Step 4
Meanwhile, in a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain & keep warm.
Step 5
Serve the chickpea curry with a side of fluffy rice. Top with fresh cilantro & some minced red onions, if you have some left. Enjoy !
