Step 1
Mince the garlic and onion and put them in the Digicook container. Close the top with the measuring cap and program it on speed 5 for 15 seconds. Get the garlic and onion off the edges of the container with a spatula.
Step 2
In the mixing bowl, add the garlic and onion with the spices (curry, cumin, ginger) and a drizzle of olive oil for 4 minutes at 120°C in reverse mode on speed 1.
Step 3
Add the chopped tomatoes, 1/2 cup of water per person, the coconut milk and the strained and dried chickpeas. Close the top without the measuring cap and program it in reverse mode at 100°C on speed 1 for 10 minutes.
Step 4
Meanwhile, cook the rice in a pot according to the package instructions. When it's done cooking, drain any water that remains.
Step 5
Plate the rice first and serve the curry on top. (Optional: add some fresh cilantro.) And enjoy!
