recipe

White rice (long grain)

Step 1

Cook the rice according to package instructions. Once cooked through, drain & keep warm.

Red onion
Garlic

Step 2

Meanwhile, in the Thermomix bowl, add : the peeled onions & garlic. Mix for 5 sec / speed 5. Clean the sides of the bowl with the spatula.

Curry powder
Cumin (ground)
Ginger (ground)

Step 3

Add a drizzle of olive oil & the powdered curry, cumin & ginger. Cook for 4 min / 120°C / reverse / speed 1.

Tomato sauce
Coconut milk
Chickpeas (canned)

Step 4

Add the chopped tomatoes, coconut milk, 50 ml of water per serving & the drained chickpeas. Season with salt & pepper. Stir & cook 10 min / Varoma / reverse / speed Simmering.

Cilantro (fresh)

Step 5

Serve the chickpea curry with a side of fluffy rice. Top with fresh cilantro & some minced red onions, if you have some left. Enjoy !
